Looking for inspiration for summer recipient that are both substantial and reasonably healthy. I currently do lots of salads, jacket potatoes and wraps and poke bowls. Just run out of ideas.

Old school style bean salad!

yellow pepper
green pepper
can mixed beans
can green beans
spring onions
dressing of tsp yellow mustard, white wine vinegar, little olive oil, black pepper and a pinch of sugar

best made and refrigerated over night for the next day, allows the flavours to develop.

I serve with some protein of choice, usually something hot to make it feel more like an evening meal.

I'll often use tinned or pouches of lentils to make a salad with roasted veg and do a dressing with chilli in it and put herbs in the salad. Nice as a side or with grilled goats cheese or halloumi or feta.

Roasted veg and chuck a tin of chickpeas in at the end for 5 minutes and then serve as a side with protein.

Chicken skewers marinated while I'm at work.

I make coleslaw salad a lot - usually with a thai sort of dressing, coriander and salted peanuts on top. Shred cabbage, carrot, spring onion and anything else I have in the fridge.

big Mushrooms done in the oven with garlic, lemon juice and chilli with some parmesan on the top.

I love a pasta salad. I do a few different ones chicken caesar, BLT, Tikka, taco or antipasto. I also love a nando's fakeaway. Some nice homemade burgers, I like Greek style turkey ones, minted lamb, Mexican bean or bhaji burgers. Love a roast chicken pesto and salad baguette too with potato salad or cowboy caviar. Yuk sung with a nice noodle salad is really lovely too.

Salmon fillets with cous cous. I like it with chopped veg roasted in olive oil & balsamic vinegar (I like chopped corgettes, red peppers, red onion, baby sweetcorn).

Salmon cooked any way you like with lots of cous cous, salad, and sour cream

Fajitas. I buy the Nando's spice mixes in the bags. Cook chicken breast in the bag and serve with wraps, avocado, sour cream, various veg etc

Kebabs- chicken/lamb/halloumi served with salad and taboulleh or cous cous

Does anyone have a potato salad recipe that they use?

Steamed salad or new potatoes, cut into bite-size pieces as soon as cool enough to handle
Chopped spring onions
Finely chopped tart apples eg Granny Smiths
Best quality mayonnaise- either home-made or to your taste
Apple cider vinegar
Freshly ground black pepper

As soon as potatoes feel suitable to handle, very gently mix all together and let cool in the fridge. Top with chopped parsely and - for me at least - yet more black pepper. You need enough cider vinegar to add sharpness, and enough mayo to add richness. The balance will depend on you.
Serve with more parsely - lots - on top and rocket or watercress all around, as a garnish.

Variations:
I love - but many people will not - lots of finely-chopped celery added, with celery leaves as well.
If to be served with fish or hard-boiled egg, then added pickled capers and fresh dill and/or chopped piclked gherkins are transformative. I'd leave out the spring onion, though some people like it still there.
If serving with meat or sliced sausage/salami etc, then adding grainy mustard instead of the capers and dill is said to work well.

For all thes recipese - if it's to your taste - you can subsitute a proportion of Greek yoghurt/creme fraiche for some of the mayonnaise.

Classic Salade Niçoise makes a substantial meal, new potatoes, tomatoes, cooked green beans, hard boiled eggs, lettuce and tuna.

Chicken Caesar Salad, Waldorf salad with smoked mackerel, Russian mixed vegetable salad with chopped ham, are some other ideas.
