Potato Salad Recipe

Do you use Mayo? Sour cream? Salad cream? Any mustard?
Any extras like chives, onion etc?

How do you make potato salad?

I use this simple recipe. It always gets compliments when I roll it out, just not suitable for vegetarians!

Mayo mixed with some of the vinegar and dill mix from the gherkin jar and a teaspoon sugar, teaspoon of Bavarian sweet mustard. I boil the potatoes in their skins and peel them when cold, slice and throw in finely sliced red onion and pickled gherkins.

Mayo (not too much), Malden sea salt (for the crunch), finely chopped spring onion, black pepper. Optional thin sliced gherkin, but not spicy or sweet - Mrs Elswood’s dill pickle is perfect.

I either do a basic one of just boiled salad potatoes with sweetcorn, chives and all mixed together with mayonnaise.
Or I do a similar one to our Polish Easter breakfast one which is boiled salad potatoes, diced pickled gherkins, sweetcorn mixed together with mayonnaise and some of the pickled gherkin water. The Polish one has diced up smoked sausage in.

Throw some crispy chorizo in...

Smoked veggie hot dogs sliced, gerkins sliced, mustard in the mayo, sea salt and black pepper. Sometimes a hard boiled egg jumps in and sometimes there is horseradish in the mayo or lemon juice....very flexible, that's why I like it!

Little bit of whole grain mustard in mayonnaise and some marjoram.

In the opposite direction, mayonnaise again but sliced green olives, some smoked trout or trout eggs and finely chopped parsley is the absolute business. With sweetcorn if I’m feeling it.

I would imagine it would be lovely with creme fraiche because the Lidl version is absolutely lush!!

I do this! I add sour cream too though.
