Does anyone have this old cook book from Delia? I'm looking for a recipe for parmentier omelette, think it has spring onions in it?

'Parmentier' usually means something with potato - is that what you're looking for?

I don't have the book. Would this be of any help? It's a very poor quality video, judging by the first few seconds, and rather long, but he is cooking directly from the book.

OMG that video is truly awful - I couldn't bear to watch it once he started chopping the potatoes. His fingernails ... 😰

This looks interesting. Do you not cook the potatoes before or are they just sliced small?

Thanks everyone, that's lunch sorted! If you cut the potatoes very small they don't need cooking beforehand.
