why will my egg whites not set and go peaky ....

im trying to make a pavlova but all i get is a thick creamy consistency it will not peak ,what am i doing wrong ???
who can give me a fall proof way of making this
please ...

is your bowl greasy? Is it plastic? Is there any yolk getting in there?

Clean your bowl with a lemon first.

Definitely some fat getting in there - could be egg yolk in the white, greasy bowl or whisk. (Not heard of plastic bowls making a difference though, VVVQV - doesn't seem to make a difference for me).

Jane Fearnley (Hughs' mum) says use twice as much sugar... I have yet to try it though.
