Hi! Today we used lamb chops for another recipe where we only needed the meat and not the bones or fat (the chops were all that was boat the shop). however, there is still some meat and fat left over with the bones. We don't want to throw what's left over.

has anyone got any tips on what we can use it for? we don't want to waste them.

Lamb broth: Put them in a saucepan with a carrot, halved onion and stick of celery. Bring to boil and simmer for two hours.

Drain and set aside stock. Pick any meat off the bones. Refrigerate stock and then skim off the hardened fat.

Soften an onion, add some finely diced carrot and potato. Add a couple of tablespoons of pearl barley and the reserved stock. Bring to boil and simmer until barley is soft. Add some sliced kale and let it cook through. Season well with salt and pepper and a spoonful of mint sauce.

Serve with crusty bread.

Exactly what I was going to suggest! A nice spiced lamb pilaf could be good too.
