Am having a few girlfriends over for lunch next Saturday. Any ideas what I can give them to eat? Two veggies and three carnivores!

Is it a full on lunch or light finger food or something in between? For a light lunch I like quiche (currently doing courgette quiche quite a bit), some salads, new potatoes... there could be some cold cuts of meat available for the meat eaters but primarily vegetarian.

I was also going to suggest quiche.

Alternatively

A homemade soup with a couple of different breads, a cheese board and a separate platter of meats.

A vegetarian pasta bake and salad.
We like this lasagne and we're all meat eaters.

Similar to a quiche but quicker, I often throw together a quick puff pastry tart. This blue cheese and sweet onion with watercress and walnuts one is delicious. I just serve with a few salads.

Another really easy puff pastry thing from the Green Roasting Tin book -

open up sheet of puff pastry (I leave it own the paper it's wrapped in and cook it on that, on a baking tray)
spread it with grainy mustard - don't use too much!
top with sliced shallots
cover with grated cheese
bake

It looks and tastes as if you've made much more of an effort than it is.

A couple of tarts, some boiled or roasted new potatoes and a few salads would be lovely and not much fuss.

I have that book!
