I’m very bored of the things I take into work each day and I don’t want to spend money buying any from pret etc. Help me have some more ideas!

Any gluten free packed lunch ideas? (That are also vegetarian, I’m not a fan of meat.)

This is delicious. It’s basically a crustless quiche, but it’s full of protein and really filling. I reduced the cheese (&calories) a little and throw a couple of spoons of nutritional yeast in to keep it tasting cheesy. I always eat my quiche cold so it’s perfect and great with salad, on its own or, for dinner, with a few new potatoes/a jacket or whatever.

Buckwheat pancakes are gluten free. You could use them as wraps filled with avocado, tomato, lime and salad to eat cold, or chilli beans and grated cheese to heat up.
Humous and falafel with salad or crudites.
Homemade frittata (thick omelette of fried potato, onion, peppers, peas and herbs)
Get a wide necked flask and fill with rice or lentil gf pasta and sauce or soup or veggie stew.

Hummus with veg sticks.

Roasted med veg are fine cold.

Boiled new potatoes.

Potato salad, coleslaw etc.

Omelettes can be used instead of wraps. So can lettuce.

Japanese style rolled omelette.

In summer I make a courgette and coriander soup that is great chilled.

Peppers stuffed rice and veg.

Selection of cheese.

Baba ganoush. I have a great cheat. Back the aubergine for 20 mins, then put in a colander and prick so the bitter juices come out. Take the flesh out of the aubergine and mix with mayo.

Stuffing. I know it sounds crazy but a packet of stuffing made up and rolled into balls.

Olives.

Rice with mixed veg.

When I have been working I've found a bento style collection of picky bits works well.

Fruit that has been prepped so cubes of melon in a ziplock bag.

Baked spiced paneer (whatever spices you like) in a gluten free wrap with raw veg, yoghurt, chillies, coriander, mango chutney.

Or something similar with tofu scramble - I often made a masala tofu with spices, onion, chillies and have in a wrap. With both I would assemble when you are ready to eat by packing filling separate to the wrap.

Do you have access to a microwave? Both the above you could have just room temp, but I also do lots of soups for lunch, which you could have with gluten free bread or crackers. Or I sometimes make a tofu (silken) and rice miso soup with any sort of veg thrown in. So it's basically just cooked rice, silken tofu and then like chopped spring onions, maybe carrot, greens if I have any, then I just boil the kettle and make the broth with one of those miso soup pouches. Add a bit of soy sauce and chilli flakes.
