Glut of sweet potatoes and fresh ginger

DH hates sweet potatoes..... hence the veg box glut.

Any ideas for using them up and freezing?

Fresh root ginger can be frozen as is, makes it easy to grate when you want to use it. Can't help on the sweet potato though.

Soup? Sweet potato fries? If you chip em, par boil them and freeze them on a baking tray, then you can keep them in a bag in the freezer until you need them.

Use sweet potato in lieu of potato in just about anything - potato topping on a pie, as a jacket potato, wedges etc.

Ginger I would prep (peel and grate or puree) then freeze in tablespoon quantities for ease of cooking. I use a LOT of ginger so I buy 1kg tubs of it pre-pureed 😂

I like these Sweet potato Falafel. They are easy to make, pretty healthy as they're baked not fried and you can freeze them. I add chilli but you can use any spices you like.

I hope this link works - if not Google River Cottage sweet potato soup. It is the nicest soup I have ever tasked, honestly. I would make vats of it. It used to be a dinner party staple when I used to do dinner parties, and I never had a guest who didn't like it.

You can do a leek and potato soup but with sweet potato and freeze it. Also carrot, coriander, ginger and sweet potato soup will freeze well. Sweet potato will bulk up a chilli or a curry and you wouldn't notice it. Also you can cube ginger and freeze it to remove as needed.

Also recommend sweet potato jacket potatoes! And I'd crush the ginger and keep in the freezer for smoothies and stir fries

I use sweet potato in Thai red/green curries. Can keep it veggie and add other veg like aubergine, mushroom etc or chicken

My son loves my cauliflower/sweet potato soup (plus onion, garlic, 2 carrots and a bit of double cream) - he wouldn't usually touch sweet potatoes.
Never tried it, but I could imagine sweet potato Rösti might be very tasty

I've been making a pumpkin and sausage lasagne for months as we had a pumpkin gut. You could switch it to sweet potato.

AS pp said, I dice sweet potato into curry and chilli and literally no one knows it there.

You can make sweet potato pie. I always add a bit of ground ginger but no reason you can't use fresh.

Otherwise, creamy sweet potato soup with ginger and other spices (whatever you have to had, I'd be inclined to use cinnamon, nutmeg, cumin, coriander, maybe some cardamom).
