Depends what sort of meal you’re going for really. If a roast, then all the standards - roast potatoes, red cabbage, cauliflower cheese, peas, carrots.

if more of a salady meal, then maybe potato dauphinoise and salads, pickles, coleslaw etc?

Cauliflower cheese and Pommes Anna is nice as a side (it's especially nice if you mix a little bit of the juices from the joint with the butter when you make the potatoes).

Another supporter of parsley sauce, could drink it straight out the jug.

Parsley sauce with gammon is a classic combination: you can't use the meat juices for gravy as it is cured so too salty.
Otherwise you need saucy sides: as a PP said; spiced red cabbage, cauliflower cheese are great. I sometimes do leeks in cheese sauce with a roast.
Alternatively, just serve slices of the gammon with chips, a fried egg and some roasted tomatoes.

Yes, agree with parsley sauce or cauli cheese or macaroni cheese.
I like pineapple with mine, DH likes a fried egg!

Something creamy: either leeks in white sauce, parsley sauce or cauli cheese,
Two green veg (e,g green beans, kale, broccoli, peas)
One coloured veg ( e.g red cabbage, carrots), and potatoes.
I don’t think roast are the the best potatoes with gammon and would do new boiled, mash or dauphinois/ fondant.

Cumberland Sauce is a lovely traditional accompaniment to ham. MIL always served it with this and it really made the dish. Made with orange, lemon and red currant sauce - she always added a drop of Port as well!
