How would you make a leek and sour cream pasta sauce?

I would slice the leeks fine and fry gently till soft
then add sour cream and stir round to heat through
then stir into hot drained pasta (probably tagliatelle or linguine, not sure why but I think it;d work better than eg penne)

chop the leeks, fry in some butter, with some salt and plenty of black pepper, maybe a little garlic, maybe some chopped bacon. Once cooked, add the cream ( creme fraiche works well too ), stir and simmer for a couple of minutes. Taste to see if it needs any more salt. Stir in cooked pasta.

That's about what I was going to do. With maybe some parmesan. Wasn't sure if it would maybe need a bit of added oomph, but not sure what?

Fresh herbs, i've done a really nice one with lemon zest, fresh rosemary (finely chopped) and grated parmesan - I used ordinary cream but soured cream would work jusr as well.

oh yes, a bit of parmesan too, but only a little.

I'd use LOTS of parmesan - freshly grated of course - but then I love the stuff (not from a carton, it's tastes like soap!)

Also good with a bit of tinned salmon.
