I thought I'd got pork chops out of the freezer and had a recipe in mind. However have just realised they are lamb. My mind has gone blank about what to do with them.

Any ideas?

TIA

Sorry this is late, but this a recipe of my mad Aussie Aunt!
8 large lamb chops, take of as much fat as you can.
1 large red onion, cut into thin wedges
2 garlic cloves, thinly sliced
1 tablespoon wholegrain mustard
¼ cup redcurrant jelly or cranberry sauce
1 tablespoon water
salt and pepper
1 tablespoon olive oil
1 tablespoon finely chopped parsley
salt and pepper

Preheat oven 220° C/ 200°C fan forced.

Place lamb chops, onion and garlic into a large baking dish. Combine remaining ingredients in a small bowl and spoon over lamb and onion, and turn to coat evenly. Bake 10 minutes, turn over and cook for a further 10 minutes or until lamb is cooked and crispy. Remove and keep warm.

To serve; divide lamb chops, onions and sauce between four plates and serve with vegetables of your choice.

Ten, that sounds really delicious.

We had them marinated in garlic and olive oil, then grilled.

They were yummy, but I will definitely try out your recipe next time.

Thanks
