Does anyone have a really good gluten free bread recipe?

I don’t have a bread maker and have tried a few recipes which have been a flop. Anyone got something that’s actually tasty?

I don’t eat bread a lot but occasionally just want a nice bit of toast! The stuff in the shops here (not UK) is crazily expensive and not great.

I have this old recipe I tweaked until it worked for us and our tastes. I'm not gf myself but my family members liked it.

GF mix: 3 parts rice flour, 3 parts cornflour, 2 parts soya flour, 1 part masa harina

Ingredients

1Tbsp dried yeast
1 Tbsp sugar
375ml tepid water
400g GF mix
2tsp Xantham gum
1tsp salt
3 eggs
1½Tbsp oil
1tsp cider or white wine vinegar

Method

Mix dry ingredients in 1 bowl and whisk wet ingredients, except water, until frothy in another.

Add water, and the other wet ingredients, to the dry ones and blend well for around 4 minutes.

Pour into a ~1lb loaf tin and leave to rise for about 1 hour. Bake for about 1 hour at 180°C until golden and sounds hollow when tapped.

Let me know how it turns out as I've not made it for a few years now.

Thank you so much @Paranoidprepper I have to look up masa harina as I’ve never heard of it!
