dh and I need to make some serious changes to our diet. I'm looking for nutritious but filling meals- breakfast, lunch or dinner. We have an air fryer in addition to all the normal kitchen bits but no slow cooker. Please inspire me!

I got this recipe on MN and often see it posted. I make up big batches and have with rice, guacamole etc one night, baked potatoes another, and freeze a portion or two. Very tasty, filling and low fat.

For filling try focus on making sure each meal is high in protein. For breafkast I have a bagel with egg, chicken sausage and a slice of cheese. Lunch I have a burger bowl (turkey burger, handful of sweet potato fries, Spinach, small grated cheese, red onion, spoon of guac hummus and salsa, squeeze of lime, quartered cherry tomatoes) and bbq sauce. I have the same lunch every day because it keeps me full all day! Dinner is some kind of meat carb and veg!

I love a jacket potato with, mayo grated cheese, red onion & dressed salad.

Some kind of yummy granary/seeded fresh bread with good quality peanut butter.

@Yestothis I suppose our biggest problem is snacking really. We eat reasonably healthy on the whole but ( particularly over the holidays) have eaten far too many snacks. I've been pregnant/breastfeeding for the past 5 years so it's really hard to get out of the mentality of ' another biscuit is fine'. I really need to lose some weight but it's so hard with chronic sleep deprivation and 3 small children!

I'm so the same, our meals are really healthy, but having dinner with a toddler at 5pm leaves a whole evening open for second dinner and snacking! I'm trying to be more mindful of what I eat in the evenings so I'm having things like

  • Greek/natural yogurt with a small portion of berries
  • Carrot/cucumber/pepper sticks with hummus
  • Roasted cauliflower with hummus
  • A small portion of nuts
  • Rice cakes
  • Homemade popcorn

Obviously not all in the same evening, though the amount does depend on how early our wake up has been that day!

Does anyone have any nice snack recipes? I have such a sweet tooth at the moment.

I totally agree about the UPFs- they are evil. I wish they'd bring in legislation to have them labelled so people know what they're buying.

You cannot beat the Joe wicks 'peanut butter bars' for a snack
All you need is a blender or food processor and around 10 mins to make them.
I usually make a batch on a Sunday and they will be the nice evening treat for myself and husband for the week - really nice with a cup of tea. (Just google Joe wicks peanut butter bars and the recipe should come up'

Other snacks I like are hummous and toasted tortilla wraps or crackers
Apples & some sort of nut butter on them
Can't beat cheese on toast

Rice and fish in a pan with a 50/50 mix of OJ and water.

You need something like a salad on the side or a starter.

Change the snacks to cheese / fruit /veg. Individual cheese portions, slice up some fruit and put in the fridge.

Home-made popcorn (from kernels, not ready to microwave) is underrated.

Do it chili oil, garlic oil, cinnamon, oregano. Toss it in Marmite, parmesan, marigold bouillon powder, cocoa powder. It's great when you want a fast sweet or savoury snack.

We do eat meat but there is a lot of protein in soya mince, so we buy that frozen and use it in some meals, either with mince or instead of it.
