Gluten and fructose free recipe ideas

I am hosting some foreign students in a couple of weeks for 4days, and one of them has gluten and fructose intolerance.

I have to provide breakfast and dinner for 4 days. Anyone have any easy recipe ideas? I have googled but can only find lists of ingredients rather than recipe ideas and it's left me a bit confused as to what is/isn't allowed

Could you ask the service your with to provide a list of food/meals this student can have? Their family can make one up.

We host students each year and any that have special diet requirements we always get given extra information.

Fructose depends on how severe.

My daughter has it and basically just had to avoid dried fruit / yoghurts / squash / corn syrup.

It can be more severe and you cannot eat certain fruit and veg - some score more highly than others.

Gluten you need to understand if it's intolerance (and to what level) or coeliac.

Coeliac you cannot even have traces so you need to avoid cross contamination, I have intolerance so can eat small amounts - eg in gravy or sausages but steer clear of bread / pasta.

So in both cases I don't think you need specific Receipes. Just cook using ok ingredients - so rice / potato based meals not pasta ones.

Breakfast could be eggs/ plain yoghurt not toast / cereal.

Yes to asking, like the pp said a lot of fruit has fructose is so it depends how much they usually tolerate. You probably want to ask if they have to avoid onion and garlic which have fructans not fructose.

Lower fructose fruit:
Blueberries
Oranges
Kiwi

Lower fructose veg
Carrot
Parsnips
Spinach
French beans

Ok in small amounts usually - tomato, cucumber

Other random foods that are gluten free, fructose free...
Mushroom
Potato
Rice
Eggs
Meat
Dairy
Olives
Peanuts
Some sausages

Thanks everyone, really helpful.

It's definitely not coeliac, I checked that.

I've now asked for a list and hopefully they can provide some guidance.
