Ideas- main to go with potatoes and rice

It’s my mother’s birthday this Sunday. DH and I have invited my parents over for dinner. Looking for menu inspiration.

My dad is a meat and potatoes chap - preferably beef, nothing too spicy. My mother enjoys all types of food, but can get indigestion from red meat. She also enjoys not eating potatoes when she can.

One child is mostly veggie. The other is easy.

I was thinking I could do a quick oven pumpkin/squash risotto, plus a casserole of some kind (maybe coq au vin), plus baked potatoes.

Does anyone have any other suggestions though?

And an idea of something rhubarb for pudding?

Usually when I have rice and potatoes it is with a curry and the potatoes are Bombay potatoes.

Saturday Kitchen last week was a really easy rhubarb and ginger trifle using ginger cake. Would be really easy if using shop bought custard as well

Not exactly your brief but...
How about roasted Mediterranean veg with couscous. I normally roast onion, peppers, courgettes, aubergine ( for me as everyone else dislikes - weirdos), tomatoes, garlic, herbs and mix through the cooked couscous. Add feta for the veggies to it, or mix in butter beans/ chickpeas/ any other beans, but you could have roast lamb steaks/ chicken drumsticks/ sausages ( or veggie sausages) on the side instead for those who want it? If your dad is definitely not up for couscous ( although this isn't spicy) maybe baked potato, lamb and the roasted veggies?

then for pud
rhubard crumble
coffee and walnut cake

really easy and very well received!
