I've just put 3 teaspoons of ground coriander into my spiced muffins by accident instead of 1 teaspoon of cinnamon. They are in the oven now and hoping I've discovered a masterpiece. Kids are sceptical...

coriander seed has a fragrant, almost lemony scent, I have used it in shortbreads before. 3 teaspoons seems like a lot, but I guess that depends on the batch size. I wonder (if they're not great) whether you could do something like a lemon drizzle topping/syrup to overpower the flavour?

At least you didn't put beef satay as one of your trifle layers.

That's a Heston Blumenthal move! Did anyone try it? Verdict? I mean, it sounds completely grim, but you never know.

Happily, I can report that substituting coriander for cinnamon in cinnamon muffins turned out to be an inspired move. They were rather nice.
