Vegetarian tea from my cupboard/fridge

Hello, help me out here mumsnetters as I forgot to get anything out for dinner... What can I make for tea?!

I've got in:
Pasta (but we had spaghetti yesterday)
Risotto rice (kids don't like it though)
Potatoes
Eggs
Cheddar
Carrots
Bell pepper
Broccoli and purple sprouting
Sad cabbage
Tinned tomatoes
Pulses - kidney beans, cannellini, butter beans
Chickpeas
Lentils - green or red
Baked beans
Red pesto

Completely blank mind...

If you want super simple I'd take the eggs, potato, cheddar, peppers and seasoning and make a Spanish omelette type dish. It could do with an onion though.

Lentil/chickpea shepherds pie. I would also be inclined to ignore yesterday's spaghetti and do a pasta bake with grated cheese on top.

Another option would be to add the tinned tomatoes, bell pepper, butter, olive oil, seasoning (possibly a spoon of the red pesto) to make a simple sauce for the pasta, then add grated cheddar on top.

Make a minestrone soup, with all the veg in it, the tinned tomatoes, add a tin of either sort of beans for some protein and some broken up pasta, with grated cheddar sprinkled on top of each bowl. Dollop of red pesto on top optional.

I made a lentil Ragu yesterday with onions, carrots and mushrooms very finely chopped, some puy lentils, a dash of red wine and some stock, a few herbs and some tomato puree and dried chilli flakes. It was lovely with a fried egg yesterday and some pan roasted broccoli. Today I'm dry frying some sausage and then adding the Ragu. Tomorrow I'll have it with pasta and cheese.
