I made up this cake as a mish mash between two recipes. The first few times they were great but now the orange top goes wrong every time, ending up with overcooked, too chewy or disintegrated orange. Can anyone help with what's going wrong or make another suggestion?
I'm sure im doing the same thing as before which is a caramelised orange with a light caramel as a glaze. I poach the orange slices in sugar syrup for 20 minutes, dry them on baking paper and glaze with the syrup slightly thickened .
Can anyone suggest what to do, or think of another topping?
