Got some pork mince for dinner tonight and fancy a change from the usual meatballs. Any suggestions?

Pork and black bean burritos.

Following with interest. School used to serve up something called savoury mince 50 years ago. I loved it! Pretty reasonable cook but I’ve never been able to replicate the exact taste.

Pork and apple burgers are good

I make variations of this recipe fairly often, not always followed exactly as I use what I have in but it's a great base recipe www.recipetineats.com/vietnamese-caramelised-pork-bowls/

Haha, snap!

And funnily enough I have those meatballs on my meal planner for tomorrow!

OnlyLoveCanBreakYourHeart · 07/04/2024 11:24

haha, double recommendation! Those meatballs do sound good. Do you do the pickled veg too?

A Thai style dish that can be made with turkey or pork mince. So easy & delicious.

We have this once a week - it’s lovely

Pork Mince Lettuce Cups

Thinly slice an onion and grate a carrot - marinade in white wine vinegar, some sugar/sweetener and a pinch of salt while you do the rest.

Chop half a red pepper, some spring onions, a fresh chilli, cucumber and a few roasted salted peanuts into small pieces.

Fry pork mince with some garlic and ginger until no pink bits remain (about 6 mins) sprinkle in some 5spice, soy sauce, rice wine vinegar and/or fish sauce and cook for a minute more.

serve in little gem lettuce leaves with the (drained) carrot and onion and all the other bits on top with a drizzle of hoisin sauce

Pork version of cottage pie:
Make filling as usual, with a tin of toms and chopped mushrooms.
Top with shredded up rosti potato.
Waitrose used to do this in a kind of 'sachet' pack, but I now buy frozen rosti potato cakes, defrost them, break them up with a fork.
Regret to say that in our house this is known as 'piggy pie' 😁

I did, it’s straightforward.

Any idea roughly what would have gone in it?

Meatloaf. I make one with crushed cheddars or Ritz crackers instead of breadcrumbs. Also sneak in extra veg. Smother it in barbecue sauce before baking. Dc love it.

MassiveOvaryaction · 07/04/2024 17:52

A third recommendation for the Vietnamese pork bowls too! Really enjoyed those but I know if I offered the choice to dc they'd pick the meatloaf.

I know it's a bit late but I've made Pork & Apple Burgers from Eat Well for Less before.

Gousto have a recipe for Pork & Pineapple tacos which are excellent.

We are having Thai Pork lettuce cups tonight - really quick and easy and a family favourite slightly adapted over the years but this is basically it.

Nigel slaters pork stuffed peppers is delicious & looks so pretty on a big platter. I often use the pork & rosemary mixture to stuff courgettes, tomatoes, aubergine etc too if I have some in the fridge. Similar to Greek stuffed vegetables.

Thai larb gai, which looks like the minced pork recipes which have already been mentioned:

I often use pork mince for swedish meatballs. I think I do the Recipe Tin Eats recipe.

Or a deconstructed 'egg roll in a bowl'.
