Quick-emergency aubergine problem!

I bought 4 aubergines to make a curry and now won't be able to do anything properly with them til next week. What can I do to keep them useable?

Put them in the fridge, they easily last a week or two in mine

Or chop it and fry it up, then freeze it. Works well.

Have you got time to roast them in the oven? If so you can roast them, scoop out the flesh and freeze, then make this curry when you have more time.

Could you make the curry now? Many get better with age. If too long to leave in the fridge, could you freeze it?

They last ages. Couple of weeks easily. If there's gnarly bits I'd just chop them out and use the rest. Quite often just fry up chunks of aubergine and have them in the fridge. Makes for a very quick meal.

I must be living in a parallel universe from some on this thread, because in my experience aubergines don't keep all that well. They also take ages to cook. I love them, so am happy to give them the time they need to get really soft. Tough, chewy aubergine is not pleasant to eat.

I don't find they keep well either - not reliably so. I'd chop, roast and freeze them probably

Well, I had very little time, so I took the word of the people who said they'll keep well in the fridge. I'll let you know!
