Hello wise Mumsnetters. I'm posting in near desperation as I seem to do the same few meals and like so many , am pushed for time in the evenings. There is no allergies or special dietary requirements needed. Its myself, my husband, my 14 year old DS and 11 year old DD. DD is pretty fussy with veg but generally eats, meat, rice, pasta, fish ok thankfully. I've lost my father and am struggling lately, am hoping to find some meal ideas that work for you all that I could try. Sorry for slightly waffly post and thanks for reading.

Tonight I'm doing ramen. I make it similar to this recipe

Other less usual recipes I sometimes make:
Kedgeree
Bbc good food mushroom stroganoff
Jamie Oliver versatile veggie chilli - really recommend this recipe and it's huge quantities

Cheat's ramen noodle soup recipe | Good Food

Use chicken, ramen noodles, spinach, sweetcorn and eggs to make this warming soup, ideal for when you crave something comforting yet light and wholesome.

I've just made a very quick easy recipe that I picked up in Waitrose. Google 'butter soy chicken'. It was lovely with egg fried rice. Could do extra veg for the children if they don't like mange tout. Ready in 30 minutes!

If you are on Facebook, I can recommend Anna's Family Kitchen. I have made quite a few of her recipes for my lot and they all eat them.

Tonight we had

Old El Paso chicken fajitas but I put them
In a crimp it which seals the wrap almost like a pasty then put them in the oven to crisp up, with a Caesar salad and some guacamole (just mashed and avocado with some garlic salt)

We will also have this week:

Chicken stuffed with Boursin and wrapped in Parma ham (literally just cut a chicken down the middle, stuff with the cheese and wrap in the ham and out in the oven) this always goes down well. With salad or veg.

Turkey mince chilli.

Pizza but I will let my daughter do that with pre made dough, pre made jarred sauce from the asda and peppers, tinned sweetcorn and some sort of packet salami or whatever. It's easy.

Don't know for the rest of the week. Probably something beige one day like Alphabites and chicken strips with tinned peas (my fave). Icelands salt and pepper ones are gorgeous.

Might make a curry at the weekend. Maybe.

Coronation chicken wraps.

  • Slice the chicken into strips or bits and coat in curry powder
  • Oven for about 18 minutes
  • Once done, shred the chicken with two forks (this can be time consuming but isn’t hard)
  • Add in raisins, mango chutey and lots of mayonnaise
  • Put on the table with a plate of wraps and let everyone serve themselves
