Dairy free puddings?

Hello

I have friends coming over for dinner tomorrow and one of them is lactose intolerant. All fine with starters and main but struggling with pudding?

Apart from fruit salad which feels a bit boring - any ideas?

Fruit jelly made with sparkling wine.

Swedish glacé with raspberries or strawberries.

Pears poached in red wine or baked peaches.

I made a pecan pie with a vegan crust, it was delicious! It went down really well, and used the oat custard (which was delicious).

lemon meringue pie works really well dairy free. Also any fruit crumble, use margerine instead of butter.

Look up pareve desserts - they will be dairy but not egg free.

Make a cheesecake with coconut cream (tin of full fat coconut milk with the watery liquid drained off) instead of cheese. Make sure dairy free biscuits for base.

Or a glass with fruit, sorbet, coulis and wafer/biscuit artfully arranged?

I've made a quick chocolate mousse before whipping the Elmlea double cream with some melted vegan chocolate. Serve with fresh raspberries. Takes two mins
