i want to attempt to make some tasty homemade burgers on ciabatta but want to make something that has an extra flavour to it

Nigella has a great recipe...

Lean beef
worcestershire sauce
soy sauce
caramalised onions (from a jar)
natural yog (to bind it I think)

I'll see if I can find the quantities. They are delicious!

Right for two people

250g extra lean beef
1 tblspn caramelized onion
1 1/2 tsp of buttermild or nat yog
1 1/2 tsp soy sauce
1 1/2 tsp worcestershire sauce
pepper

mix all ingredients, press together. Cook in griddle pan (I just used frying pan)

Delicious and quick

When I'm not supposed to be helping put dc to bed (ahem...) I've got a FAB spicy recipe with cumin seeds and red peppers in a burger I'll find it for you...

I might add a little bit of mustard seeds crushed with garlic, but then I like it a bit spicy!

200 g lean mince
1 galric clove chopped
1 tblsp tomato puree
1/2 tsp cumin seeds
1/2 red pepper, de-seeded and diced v. finely
1 small egg, beaten
25g (1oz) fresh white breadcrumbs
1 tblsp chopped fresh coriander
salt and freshly ground pepper

For dip/relish
100g plain yog
1 tblsp fresh coriander
zest of 1/2 lemmon

Mix mince, garlic, tomato puree, cumin seeds, red pepper, egg, breadcrumbs, coriander and seasoning.

Shape mixture and refrigerate (stops them falling apart when you are cooking them)

make dip/relish by just stirring together ingredients

Cook burgers in frying/griddlepan

I always serve this with potato wedges which can be dipped into the yog. mixture. DELICIOUS! (make sure you cut the pepper v. small though or it will stop the mixture holding together)

Actually I have some of the spicy ones frozen at the mo. but I haven't tried freezing them before. My only concern is the egg in them, can you freeze egg?!

Probably use gunk scraped from inside intestines or earholes to bind burgers instead of egg...

Sage, Apple and Pork Burgers

1 egg
2 - 3 tbsp apple juice
2 spring onions, chopped
1/4 cup dry bread crumbs
1 tbsp finely chopped fresh sage
salt and pepper to taste
500g lean ground pork

Mix it all up and cook in griddlepan.

My DH makes these and serves them with apple slices and carmelized onions and lettuce on rolls. God I love him when he cooks!#

And yes, you can freeze them, uncooked.

I have never made a better burger than Jamie's burgers here I sometimes put a little mozerella inside them mmmmmmm
