Vegetarian/vegan alternative for when family have lamb

Easter family meal for 11 - vegetarians, a vegan and meat eaters included.
If I slow cook a leg of lamb marinated in harissa, make a few rice salads and flatbreads, what could I make for the vegan/ veggies?
They could eat the salads and bread but can anyone suggest a simple but tasty ‘showstopper’ to go with them for the non meat eaters please?

If you have vegetarians and vegans something both can eat so you're not faffing around.
I'd do a whole roasted cauliflower on a hummus type base - something like this.

I love falafels but I think they'd be a bit workaday not something I'd have at a special Easter lunch.

Sorry just saw you have a vegan… could substitute the yoghurt for a tahini/lemon juice dressing

Also sweet potatoes and black beans are nice in a harrisa dressing.

Chickpea & veg salad - can make it with almost any crunchy salady veg but particularly good with red pepper, cucumber, avocado and a few cherry tomatoes. Needs a bit of red onion. If you let the chickpeas soak in the dressing for a bit it’s even better.

A green bean salad would work well, maybe with citrus dressing and toasted nuts of some sort
