I have rhubarb from a friends garden so I’m going to make a crumble. Now I need a matching main course that’s pure comfort food.

Baked chicken and bacon in creamy mushroom cheesy sauce.

Make a bed of sliced onion in a baking tray (glass or ceramic is best) lay the chicken on top. If whole bests slice in half lengthways.

Cover the chicken in a layer of bacon. Any will do but I use streaky. Bake at 190. For about 30-40 minutes until the bacon is crisping and brown.

While chicken is cooking make the sauce. Lots of sliced mushroom, at least half a punnet or more. Throw in a sauce pan with butter and pepper and fry for about a minute before adding 3 cloves of garlic and 300-400ml of double cream. Summer for 10 minutes while stirring. No need to season because bacon!

Pour the sauce on top of the chicken making sure to wet all the bacon.

Cook to reduce to desired consistacy, another 20-30 mins or so. You can add grated cheddar to the top at the end to melt if preferred.

I usually serve with rice and pan fried veg

Comfort food for me seems to mostly involve mashed potato! Mince and tatties, shepards pie, sausage casserole and mash, cheese and potato pie, toad in the hole, pie and mash 😅.

I also find lasagne really comforting and a nice bowl of soup, lentil and bacon, chicken and rice or scotch broth are my favourites.

One of my favourite comfort foods is dal and rice. Delicious, not too heavy, something which I want to eat no matter the weather or my mood. It just feels warm and friendly.

For a more indulgent option Ixta Belfrage's cheesy polenta with curried onions and sausages. My favourite new recipe I made last year.

I also loved this chicken pie which I made recently for more classic British comfort food. The pastry was wonderful and the filling was rich and really great - though I skipped the tarragon.

Try with melted butter, it's great, I tried it a few days ago. Mix the flour and sugar then add melted butter and stir- you might need to squash the bigger lumps with a fork.
The crumble is so tasty!

Lincolnshire sausages from the butcher cooked in the oven. Mashed potato with butter and milk.

Then - and this is crucial - after you've dumped your sausage and mash on your plate you pour the sausage fat all over your potatoes.

DH, who is not from Lincolnshire, thinks this is horrific and bad for your health. He's probably right. But this is what my granny always did, and so do I.

Melissa Helmsley Filipino & chicken rice soup & her one pot tomato rice are my current comfort foods. Also Michael Mosleys poached chicken soup with lots of turmeric, garlic, ginger & cider vinegar & veggies is wonderful when you're sick.

Stew using oxtail soup as the liquid and with tons of potatoes in it. Eaten with bread and a glass of milk!

I bought a cheap food processor, I only really make crumble with it…but we eat a lot of crumble.
