I would like to make SIL a cake for her birthday. She likes lemon drizzle or I could do a Victoria sponge with lemon curd/buttercream but don't think I'll actually be making the lemon curd. She actually likes lemon cakes full stop so either would do.

So any fool proof recipes for both please? And what would you prefer?

Victoria sponge, with (shop bought) lemon curd and buttercream, please.
Maybe with lemon Glace icing on top.

Victoria sponge with lemon curd -- the M and S lemon curd is nice. I don't like the grainy kind.

Basic vanilla cake/Victoria sponge recipe with added lemon zest inside. Soak with lemon syrup while warm. Ice with lemon buttercream.

This is always a winner in our house. I put a layer of shop bought lemon curd in the middle as well as the butter icing and then a lemon water icing on top

@RinklyRomaine Gosh the Camilla Sponge could be the new Victoria Sponge. 😂I forsee a great future for it.

All these sound lovely. I'll see if the local posh organic food shops up the road have lemon curd because unless I drive to M&S there's not one near me. No deli either which would help... And I'm out after work so can't nip there afterwards and back in time.

Years ago for one of her birthdays I made these small lemon cakes (not cupcakes), sort of like fairy cakes with lemon glace icing and lemon zest inside and on top. They went down a treat and her brother who's a real foodie and food snob loved them. (They all lived together at the time). I have done a lemon drizzle cake for her too but was a while ago.

@RinklyRomaine yours is the winner for me. Now I have to limit my cocktail consumption tonight so I don't do this hungover!

Yum! My mil made me an amazing version of this for my birthday this year and I ate it all as I'm the only lemon curd lover. I'm not sorry. It was lush 😊

On lemon topics, DM when she was younger made a lemon meringue pie, and for the past few years me and DB keep asking her to make it and she's 'lost the recipe' - I know it's in her kitchen/house somewhere. It was so delicious and she used to make it a lot. She even made her own lemon curd too. I am not her daughter really!
