Don’t need to use the squash but could do with using up other 2. Just throwing squash in in case. What would you make?

Bosh curry house jalfrezi. The best homemade curry!! It's a veggie curry but I'm not a veggie, and I've cooked it for plenty of people and have had lots of meat eaters ask for the recipe!

Roast veg fajitas, served with spicy tomato sauce and cheese and maybe a dollop of Greek yoghurt.

Roast aubergine and red pepper pizza.

Pasta alla Norma.

I see you've made your decision but I'd go with a warm salad of roasted aubergine, pepper and squash. I'd use baby spinach as the greens, top with feta cheese and make a lemon/honey/mustard dressing.

I will save that as a thought, made something similar the other day with a lime dressing and halloumi. It was delicious.

But I've got a pasta avoidant husband (unless it's spag bol, or, oddly, those vacuum packed filled pasta which I really don't like) and he's out tonight so pasta sounds good.

You mean the fresh filled pasta? I think those vary in quality and flavour massively. I don't like the little prosciutto and cheese filled ones from Sainsbury's or wherever but DH and DS love them but sometimes I buy the big raviolis type ones. There's a brand called Del'Ugo or something which are great.

@JonVoightBaddyWhoGrowls I'll look out for those. I don't mind the M&S big filled ravioli on occasion. But he buys the coop ones that aren't great. I don't know why as they really don't fit in with what he normally eats but I think he thinks it's an easy tea on nights he's cooking.

I know what you mean. it's weird. Too much pasta vs filling for me. But having said that, when I first moved to London and had a budget of £10 per week for evening meals, I used to buy those with a tub of tomato and marscopone sauce which cost, together, I think £2 as a meal deal in those days and that would feed me for two days! More filling than the big ravioli fancy ones with beetroot and goats cheese or whatever! Grin
