Easter - Lamb Shanks + what other main?

I am hosting Easter Sunday lunch for ILs, my mum and my family.

The women (4) are having lamb shanks.

DH + FIL don't like lamb so I will do something else but not sure what. I have done a rib roast before but thinking 2 fillet steaks might be easier/ quicker? A kiev would be very easy to just put in the oven 30 mins before dinner but would look disappointing served next to the shanks

The lamb shanks take a lot of time - starting Saturday but one they are cooking don't need much attention.

For accompaniment, I'm thinking broccoli spears, carrots (not dinner for MIL with out carrot). I haven't decide on the type of potato, there will be a lot of flavour on the lamb so I don't need too much, possibly just boiled baby spuds with butter?

DS is 1 he will have some of mine.

We aren't major fans of lamb, so I often do a treacle ham for Easter. It's easy enough to do and you can send home leftovers for a cold lunch the next day.

Tom Kerridges Beef Short Ribs with Horseradish. A long slow cook that could go in the oven alongside the shanks.

Big hunk of meaty short rib on the plate. It’s gorgeous.

@TempleOfBloom they look amazing! DH + FIL are beef farmers so I think would approve.

With mash and either spring greens / tenderstem / hispi cabbage / fine green beans , obligatory carrots , cauliflower for colour variation.

@TempleOfBloom the recipe is actually really similar to what I do with the lamb shanks. Only difference is I use red wine stock pots, because my mum is type 1 and I currently have gestational diabetes. Too hard to measure the carb.

Sainsbury's do 'ranch' steaks with garlic butter, they take about 4 mins per side in an air fryer.

Shanks + ribs are ordered 😊they only come in a rack of 6. I asked him to cut them into individual ribs though I think 3 per person might be too much but I'm sure any left overs won't go to waste

Yes, two ribs is a good generous portion but nothing wrong with leftovers. I love slow cooked short rib. And shanks. Mmmmmm!

I was going to suggest short ribs! I doubt you will have any leftovers as they are so delicious but if you do it makes the best French dip sandwich 🤤.
