Apple pie - I've made the pastry and need to use up some "eating" apples - would you chop and stew first, or just slice and chuck in, with sugar?

I just posted a thread for apple brown betty with eating apples... don't really like cooking apples too bitter and you need twice the amount of sugar.

slice and chuck and unless you have a very sweet tooth, no need for sugar.
