why will my egg whites not set and go peaky ....

im trying to make a pavlova but all i get is a thick creamy consistency it will not peak ,what am i doing wrong ???
who can give me a fall proof way of making this
please ...

You have to make sure your bowl is totally clean before you start. Any trace of water or grease will stop the eggwhites from going stiff. Also, if you get a trace of yolk in the eggwhite, it will emulsify them and stop them from whipping.

They say to wipe around your clean dry bowl with a slice of lemon for a final degrease before whipping your eggs. You may have to give up on those eggs, add the yolks, make yourself a nice omlette and start again.

Are you using an electric whisk? Can take ages if not.
