why will my egg whites not set and go peaky ....

im trying to make a pavlova but all i get is a thick creamy consistency it will not peak ,what am i doing wrong ???
who can give me a fall proof way of making this
please ...

Have you put the sugar in yet? It will only go into "strong" peaks once the sugar is in.

The other thing you need to be sure of is that the container and implements you are using to beat the eggs are totally oil/grease free.

Sorry - just to be clear: beat the egg whites first until they are glossy and then add the sugar (bit by bit) and bit until stiff. The for Pavlova, add the vinegar and cornmeal.
