Slow cooker vegetarian recipes

I'm looking for a recommendation for a slow cooker vegetarian recipe book.

We currently use hello fresh for the vegetarian options but it's £££ especially as it's now £10 delivery where I live.

I am not a good cook. I need a recipe! But I want to ditch hello fresh and use the slow cooker more.

Lots of options on Amazon but I want proper meals not "use it to make a sauce" options or just a soup.

Bean chilli. I put about a handful of frozen chopped onions, a sliced pepper, diced carrots, tin of tomatoes, tsp of garlic puree, tsp of chipotle paste, a tin of ‘chilli beans’ (kidney beans in sauce)and a tin of black beans/black eye beans/baked beans in the slow cooker in the morning. When I get home I stir through some sweetcorn from freezer, and leave it about 15mins to warm through. Then I dish it up with corn tortilla chips, microwave bag of rice, or quesadillas, plus a spoon of sour cream and some sliced avocado, and grated cheese on each plate. Maybe iceberg lettuce slices if I have some in fridge. I use leftovers on jacket potatoes later in the week.
Sometimes I dice the carrot and slice the pepper the night before, so is easier to put it all in slow cooker in the morning. You can also get frozen sliced pepper.

Sorry I thought you meant recipes but realise you wanted a book! Sorry. I would like to know this too. Not slow cooker but I very much recommend the green roasting tin, there are some great midweek meals in there .

The Bored of Lunch slow cooker recipe book has a few decent recipes but probably not worth buying it if you’re vegetarian. We particularly love the butternut squash risotto.

Borrow it from the library and take photos of the recipes you like the look of.

I'm vegetarian and don't get on great with the slow cooker as most veg seem to get waterier as they cook and you can end up with slop. I use a Le Crueset pan with mine on the hob. Most recipes cook in 30 minutes and they just feel fresher than something cooked for hours and hours. And tray bakes are fab - we just have lots of roasted veggies and vary the spicing.

I agree - slow cookers work great for meat recipes that improve with slower cooking times. Most vegetables don't really benefit from being cooked for hours. Quick tray bake type recipes might work better, you could prep everything in the morning and just put it in the oven when you get home for 30 mins.
