Wilton gels white chocolate

Can I colour white chocolate with the gels or will it all seize up?
If not, what do I use please?

You need oil or powder colours for chocolate, for ganache any colour will do but add to the cream. Straight melted chocolate will seize with gels as water based in general unless you happen to have an oil based one! Try it on a spoonful or two first before adding to the main amount of melted choc

Ooh! A white chocolate ganache will work well. Would you add the colour to the cream before you heat?

Yes, if you add it to the cream, I normally add when hot as it dissolves a bit better, don't think it matters really, there will be no problem, remember that chocolate will dull it a bit so maybe go slightly deeper with cream colouring.
