5 minute no stir dishes (i.e. extremely easy recipes!) e.g. Ottolenghi Chickpeas

I made this after seeing it posted about on MN

https://ottolenghi.co.uk/recipes/confit-tandoori-chickpeas

The first time I followed the recipe, ground the spices, etc. The second time I just wanged in some mixed curry powder (had most of the same spices) and some ginger powder! (Lazy I know, but now it is literally a 5 minute, no stir dish and is still delish).

I now cook this once a week. It's genius, cheap, so quick, so nice, healthy.

Do you have any other recipes to share, with hacks as to how you have made them even less faff.

The simplicity of this dish makes it quite attractive, also with the aromatics and depth of flavour. Browse online for more.

I find the recipe tin eats website great for tasty quick family meals. I made these dan dan noodles recently and everyone loved them. Last time I made exactly like the recipe but next time I think there are a few short cuts I may take to make it quicker still.

I do tray bakes - so veg with chicken thighs on top and pop in oven - you can come back in 40 minutes and it's all done. Sometimes do a green veg on the side or a salad....

Creamy curry chicken - when I do a Mumsnet Roast Chicken I chunk up some of the leftover meat and freeze.

In a pan mix curry powder with a little recently boiled water, add a can of creamy chicken soup (you could swap this for a roux made from chicken stock then add cream if you had time), mix well, add the defrosted chicken and some leftover or frozen veg and heat through. Microwave some rice and you're done in 5-10 minutes.

I stopped grinding the spices for that chickpea dish too as it took time but moreso because it left little bits of seed in the dish which got stuck in my teeth

I dont find it quick though because of the time it takes me to julienne the ginger

@scatteredgreymatter made the chickpea dish. Thanks for the recipe.it was delicious. Used ground spices but did julienne my ginger.
