Small gammon joint- as an ingredient rather than the main event

Planned to do a sweet potato hash with ham and egg tonight- but I have a last minute guest and the food just won’t go that far.

Do I just need to bundle the ham in foil and have another time, or can I use it as an ingredient in something else? I can get to the shops easy.

i don’t want a creamy pasta as we had carbonara last night.

I agree with @PoochiesPinkEars just add some bread and butter, a green vegetable would be a nice addition to add some different colour to the meal as well, just some steamed cabbage with a bit of butter and black pepper would be really good.
