Thanks for all the suggestions. We’re not really a family that eats it on toast or would have it with smoked salmon. One child doesn’t like creamy pasta sauces and another doesn’t like mashed potatoes!

I think cheesecake might be the best bet so far, but most recipes need me to buy more cream cheese so that won't solve the issue!

It makes a tasty pancake filling when mixed with fried leeks and maybe some cooked chicken. Roll up the pancakes, top with grated cheese and grill until melted. Yummy!

Make a fruit tart/pastry type thing; roll out ready made puff pastry, score edge 1cm all around to make the crust, mix cream cheese with icing sugar, spread over middle of pastry, put sliced fruit on top eg strawberries, brush edges with egg bake in oven. Best eaten immediately after cooling, do not store overnight as they will go soggy

Slow cook diced chicken in salsa, and stir the cream cheese in the last 30 minutes. Continue to cook until the cheese melts and then stir it all up. You can use it as filling for tacos or lettuce wraps, and it freezes well too.

I’m not sure which size tub you have, but the tandoori broccoli on this link is a delicious side dish and scales down easily to adjust for how much you have. I’m sure I’ve bulked it out with some yogurt before now as well.

I used my last cream cheese up by making the cheesecake element (no cherry) of this recipe.
Day one I made a mini cheesecake, days 2&3 I was just scooping it onto digestive biscuits and stuffing it in -far too delicious!

Thanks everyone. I kicked the can down the road and made a white chocolate cheesecake. It’s currently in the fridge chilling. Still have some cream cheese left but a little bit less now Smile
