I ordered some barley for a specific Polish soup recipe but Asda sending this instead. It won’t work for the soup I was planning to make but can someone give me an idea of what I can make instead.
I have carrots, leeks, parsnips, potatoes, 2 large chicken legs, fresh herbs and this broth mix. Was thinking of cooking the legs with the all the above veg (then stripping the meat off) and then adding this mix? Would that work? I’m not great with soups but want to get better!

Brown the legs in a pan, then finish them in the oven.

Using original pan, add olive oil and sweat the carrots and leeks at least 20 min (low heat). Stir in broth mix so it gets coated with the oil.

Add stock, parsnips and potatoes (diced).

If chicken legs are done, strip meat from bones. Add bones and meat to the pot.

After 20-30 min, lift out bones.

Add fresh herbs.

Depending on how much barley you need and whether you've got time on your hands, that bag probably has barley in it, you could separate it out. Google it to work out which one it is.

This sounds delicious!!! Thank you !! Shall I soak the broth mix overnight? Also, seasoning is just salt and pepper and then the herbs at end?

@NoCloudsAllowed I’m too lazy lol- will make the polish soup when I buy barley (probably in the next 2 weeks)

Exactly - stock cube dissolved in water or fresh stock will do it. Enough to cover the pan contents.

Yes, do exactly this as it's the broth mix that needs to actually cook the longest rather than the chicken.

I would do as it says on the package. I don't recall ever soaking it overnight.

I use this all the time always soak it overnight and cook longer than it says as I like it really soft.

@TheLadyIsAVamp just put all the groceries away and now soaking a 100g overnight. Going to bake some bread and serve the soup to my picky eaters tomorrow. DH and DD only likes Heinz tomato soup! I’m tired of cooking separate meals for everyone

@semideponent soup turned out delicious …. What I could taste anyway (recovering from possible covid and can’t properly taste yet) ended up blending it a bit and we had it with some homemade seeded bread. Bowls were mostly clean so that’s a plus for my family!! Thank you for the recipe 😃
