I'm looking for your best and tastiest veloute recipes, please. You know the thin, smooth, super tasty soups you get in restaurants.
I'm not interested in chunky soups but looking for the 'real deal' veloute soups which should include butter/flour.
I had a wonderful pea veloute recently, also interested in mushroom, celeriac, asparagus, tomato - any veggie veloute soup really.
