Advice needed on my cake recipe!

its a carrot loaf cake. The recipe calls for self rasing wholemeal flour, I only have white self raising or plain wholemeal. Can I do 50/50? If so what will happen about rising, as the wholemeal isnt self rasing? Should I add baking powder?

Yes you would have to use baking powder to compensate and the basic wholemeal flour I find is a coarser ground than the self raising type. It might also throw the liquid balance off as brown absorbs differently to white. I think I'd give the wholemeal a blast in a food processor if you have one to make it finer and add baking powder, it's usually 2 level teaspoons to 150g but again watch the liquids.

I would probably use the self raising white flour rather than a mix.

Oh well I’ve risked it! I sieved the wholemeal and added a heaped teaspoon of baking powder. Also added slightly more liquid. Will be interesting to see how it turns out!
