Vegetarian Roast ideas for family supper

What to cook for family friends who are veggie, coming over tomorrow night for early supper?

Fancy doing roast of a kind. Our faves include anything with roast veg - chicken tray bake / sausage tray bake etc but need a veggie option. Not veggie sausages - one of their kids doesn’t like them and avoiding the processed food route… and prob don’t want anything too fancy either…

Any ideas for a not too fussy vegetarian roast main? Anyone got a great recipe? Thanks!

A veggie toad in the hole where sausages are subbed for roasted carrots and parsnips. Add some sage and whole grain mustard to the batter and serve with your usual roast sides - roast potatoes, broccoli, cheesy leeks etc and lashings of gravy.

I would just do a cauliflower cheese.

with Roast root veg and red onion, Yorkshire puddings, green beans and pea mix ( fussy kids usually like), and bisto veg gravy

@BirdsAreDinosInDisguise I made that a couple of weeks ago for a Sunday lunch where there were 2 veggies and 6 non-veggies. I doubled the feta and halloumi and then completely forgot the burrata so bunged it on right when it came out of the oven. Served with flatbreads and a mediterranean chopped salad. Everyone loved it!

My daughter loves my stuffed Yorkshire puddings,

either buy or make individual Yorkshire puddings

make up some sage and onion stuffing, I added some cranberries and chestnuts, a little finely chopped apple, anything you like really, it’s nice with cooked and skinned veggie Richmond sausages, but if not using those bind together with an egg, roll mixture into a ball and fill the inside of pudding, I air fry for about 5 minutes.

2nd option is to make a similar filling to above and wrap in puff pastry like a sausage roll, make it look as fancy as you like, then bake, serve in slices

Individual Yorkshire puddings filled with sautéed garlic mushrooms.

Roasted half aubergines stuffed with mushrooms, sage and onion etc.

I’d be happy with quiche & roast veg or Tofu crumble that I had last night (tofu crumbled up and baked with the veg until the tofu goes crunchy-it’s delicious).

@someoneseatenmyapple Salmon isn’t vegetarian.

I would do a traditional Sunday Roast with lots of really nice vegetable sides that everyone can enjoy and gives the veggies lots of options if they don’t like one thing or another eg

Roast chicken
Pigs in blankets (veggie and meat)
Stuffing balls (veggie)
Yorkshire puddings
Roast potatoes
Mash
Steamed green veg (peas, broccoli, beans, sprouts etc) You could dress some of them eg peas with fresh mint, fine green beans with lemon butter and chopped pine nuts, sprouts with chestnuts, broccoli in chilli oil sprinkled with crispy onion
Chestnuts
Cauliflower cheese
Garlic mushroom medley sprinkled with crispy breadcrumbs and thyme
Honey roast carrots, parsnips, and butternut squash and sage
Gravy (veggie and meat)

If you want more of a veggie centrepiece, instead of serving mushrooms and chestnuts separately, I find these always go down well and work nicely with traditional roast trimmings:

Pretty easy as you can have everything pre prepped to bung in the oven (mash too) except the green vegetables but they only take minutes if you have any dressings and toppings pre prepared.

All the normal roast dinner veg sides and have with vegetarian haggis.
