Preserved limes (packed in salt & lime juice). They keep forever in the fridge. Lovely in Mexican salsa, rice salad etc.

Lime pickle, lovely with a curry. Or just poppadoms 😋. I would also definitely freeze some juice in an ice cube tray, I always do this and it's so handy to throw in when cooking rice or soups.

I always buy lemons and limes on offer and then slice and freeze for my summer fresh minty drinks or adding to salsas etc.

I made some at Christmas but I had to give it away to my daughter, as it was so delicious, I kept eating it!
It’s so calorific!!

And marmalade is really easy. First cook in the slow cooker, a quick whizz in the processor then boil with the sugar until set.
