Coriander in chilli - lost recipe

Years ago I had a flatmate that made a chilli con carne sauce which involved blending up a load of fresh coriander into a tomato based sauce which could then be used as a base to make chilli.

I have never managed to find a recipe that has a sauce like this. Does anyone have one?

It was delicious and I think of it regularly. All con carne recipes I have found focus on dried herbs and spices, or has coriander as a sprinkling on the top. This one was very heavily fresh coriander based. It wasn’t a salsa, but a smooth tomato sauce.

TIA

I think I know what you mean because I make this Madhur Jaffrey coriander chicken recipe that involves blending fresh coriander and tomatoes with fresh chili, and then using that to make the sauce.

It's an amazing recipe as it stands but I can imagine that instead of marinating chicken first with garlic and ginger as the recipe calls for, to make your chili con carne you could brown mince with onions and garlic, and then add the coriander/tomato slush with a couple of tins of beans?

Green Coriander Chicken (4)

This is from Madhur Jaffrey’s ” Ultimate Curry Bible” and is said to be a favourite dish of the Ismaili Muslims of Kenya. Serve with Indian Breads or rice.

I don't use a recipe for chilli, but add a lot of chopped coriander towards the end of cooking, almost like you'd add spinach to a curry, loads of it!
