I’ve got 3 sheets left but not much time to fuff around and not much in the fridge either.

Whatever sweet jarred filling you have - Nutella, jam, custard, jam and custard, tinned cherries, mincemeat

Vegetable samosas. Basically filo parcels with some mashed potato, curry powder and any other vegetables you have and need to use up - carrots, peas, sweetcorn etc.

I've decided to put them back in the fridge and make the veg samosas tomorrow.
If they are only half decent because of being out of the fridge and back in again (and being 2 days past their use by date) then so bit it.

For future use.... I always keep spinach and chopped onions in the freezer for this very reason. So many recipes don't use a full pack or need 1 1/2. The use by date for feta is months long when you buy it (I have some in the fridge right now that's September) so it's also a good emergency staple.

I've also done a couple of other random variations like peas instead of spinach (ran out) and sweet potato instead of spinach because I had one laying around. I think any kind of quick cook veg and any strong cheese works really.
