Dill recipes - no fish - please

I have been given a pack of fresh dill. I don’t eat seafood/fish which I understand dill usually accompanies so I’m not overly familiar with it. Any recipes appreciated!

It's nice in most salads and with feta or halloumi.
Or you could make a lemon-dill pesto out of it x

Look up some cucumber and sour cream salad recipes. You can also use in potato salad. If you can't use it all at once wrap flat in baking paper pop in a bag and freeze it.

Dill goes well with leeks too. You could make a leek and dill quiche.

I add it to potato salad sometimes.
Boiled, new potatoes cut into smaller pieces, grated carrot, spring onions, salad dressing and dill. You can also add capers and/or gherkins if you like them.

Pickled red onion: very finely sliced red onion, lemon juice, sugar, dill.

Use fairly promptly, it's not a stick-it-in-the-storecupboard sort of pickle.

Scrambled eggs with dill and turmeric. Scramble eggs as usual but with 1/2 tsp of turmeric and some chopped fresh dill. Cut further dill over the top and serve on toast with crumbled feta if you have any. Delicious.

This Ottolenghi recipe is delicious (although I tend to use spinach rather than rocket), the dressing is what I immediately thought of when I read the word dill!

Beetroot soup with sour cream, dill and lemon zest on top is nice. Or a grated carrot and beetroot (raw not pre-cooked!) salad with lemon juice and dill.

Greek rice. To cooked rice: add cumin, dill, garlic and lemon juice.

Add spinach and you have a Spanakorizo (there a many other versions of this dish).

I haven’t made them in a while but I love the USA Refeigerator Pickles - I make a huge glass mixing bowl full of them and it lasts a few weeks. I also make it with carrot slices and cauliflower although I prefer the cucumber.

I usually find a recipe with cucumber, onion slices, dill, vinegar, water, salt, garlic, mustard seeds, peppercorns.

Can also make it with thinly sliced white cabbage.

I like the cucumbers sliced into thin pieces not in spears.

It's good in spanakopita - mix with egg, wilted spinach and crumbled feta and bake in a filo crust, delicious!

Ohh, yes. Hadn’t thought of that. Theres a really good rich pork goulash recipe by Orlando murrin on one of the bbc websites.

It goes nicely with sprouts, surprisingly. Just chop some and add it to the cooking water.
