anyone got a tasty egg/dairy free cake recipe?

have gone virtually vegan thanks to ds2's odd intolerance to egg and dairy in breastmilk.
am craving cake

found lots of links when I googles, but need something tried and tested to stop me wasting time and money on manky cakes lol
any suggestions greatly appreciated

This is our favourite family cake, and I have made it successfully with Orgran egg replacer instead of egg, and Pure sunflower margarine. It also works pretty well with gluten-free flour so you can make it completely vegan plus dairy, egg, gluten and soya free if necessary. (Ds1 had a cow's milk and soya intolerance, one of his friends is vegan, and another family member has gluten intolerance, so I am used to adapting my recipes. )

Apple cake
8 oz/200 g self-raising flour (or plain flour with 3tsp baking powder)
4 oz/100 g margarine
4 oz/100 g sugar (or 75 g fructose)
3 oz/ 75 g sultanas or other dried fruit
8 oz/ 225 g diced apples
2 large eggs, or equivalent of egg replacer
Juice and grated rind of 1/2 a lemon

  1. Sift flour and pinch of salt into mixing bowl.
  2. Rub in margarine.
  3. Add sugar, apples, sultanas, lemon juice and rind. Stir.
  4. Add eggs (no need to beat) or egg replacer and stir until well mixed.
  5. Spoon into 18 cm diameter cake tin, greased and lined.
  6. Cook at 180 C/Gas Mark 4 for about 1 1/2 hours. (If your oven is known to be fierce you might want to check it after about an hour using a skewer to see if it is already done).

We don't usually bother decorating it but on special occasions it looks quite good drizzled with icing sugar mixed with water or lemon juice.

I made this for dp's 40th birthday, mil pronounced it "delightful"!

Chocolate Banana Cake

10oz plain flour
3 heaped tsp baking powder
2oz sifted cocoa
8oz sugar
8 tbsp oil
10 fl oz water
1 medium banana, mashed

  1. Preheat oven to gas 5, 180'C.
  2. Mix the first four ingredients together. Add the rest of the ingredients and thoroughly mix.
  3. Pour mixture into two greased 8 inch round tins and bake for 40 mins. Leave to cool in tins.

Sandwich the halves together with...

Fudge filling:

2oz marg
3 tbsp water
7oz icing sugar
2oz cocoa
1 tsp vanilla essence

  1. Melt marg over a very gentle heat, then add other ingredients and mix thoroughly. Leave to cool.

  2. Beat until stiff with an electric mixer or whisk.

My youngest dd is allergic to dairy, eggs, nuts etc and we use this one and this one - both posted by me under different names.
