Lasagne meat sauce

I made lasagne today but didn't follow a recipe so wonder if tbis will be ok

Browned celery garlic onion and carrot and softened on low heat. Fried mushrooms in separate pan. Added 740 g of beef to the veg pot and browned added fried mushrooms. Added a glass of red wine and bubbled down a bit. Salt pepper Worcestershire Sauce tomato purée and two tins chopped toms. Knorr stock pot. Thorough stir and brought to boil

Transferred to slow cooker to cook for a few hours on high right now will turn down soon

Will this work?

Will make a bechamel or cheese sauce later

That will be absolutely fine, that's pretty much my base recipe for anything like that.
Bolognese, lasagne etc. just tweak as needed.

Sounds fine except frying the mushrooms in a separate pan? Why would you dirty another pan?

I thought the pan be overcrowded and they might not cook properly after sweating the carrots /onions/ celery and like them well cooked?

Should I have just whacked them in?

I don’t fry the mushrooms, just pop into the sauce when cooking. No celery for us but that’s just a preference. Your sauce sounds good

Sounds fine. Not sure why you think the mushrooms wouldn't cook properly when they're being fried with the other veg then going into a slow cooker for however many hours though!! It'll be fine just whack it all in next time.

I think it will be fine. As you're using the slow cooker, you might find there's more liquid than you need, but that's easily remedied by just using a slotted spoon when you're making up the lasagna.
