What's your favourite banana cake recipe?

I do the same one every time because it's quick and easy, but I'm wondering if it's a bit boring...

4 mashed bananas
cup of sugar
100g butter
2 cups flour
teaspoon bicarb
Sometimes mixed spice, to ring the changes

I wonder if I should branch out and try one that uses honey, or choc chips, or rum? Do you guys have any you highly recommend?

The Wahaka one. Big lumps of dark chocolate and pecan nuts. It's delicious.

Although I usually use the simple Mary Berry recipe - quicker and more simple.

This is mine. Imperial measurements because I got it from a friend a long, long time ago. Easily converted.

I rarely make any other version because this is so good and we all love it. I did add chocolate chips once and they were good, but I think I prefer it plain. Chopped walnuts make a nice addition. I would find it a bit too sweet if I added raisins or sultanas.

Ingredients
4 ozs butter (very soft), or use baking spread
7 ozs light brown or muscovado sugar
2 eggs
8 ozs plain flour
2 tsp baking powder
At least 2 very ripe mashed bananas - I usually add four, without altering the other ingredients - but if I use more bananas then I scale the recipe up
Some lemon juice (at least half a lemon for 2 bananas, scale up proportionally - helps with the colour as well as the flavour)

Method
Grease or line 2 small loaf tins. Pre-heat the oven to 180C. Mash the bananas with the lemon juice. Doesn’t need to be very smooth. Cream the butter and sugar together. Fold in a little of the flour, then beat in the eggs. Add the rest of the flour and the baking powder. Mix the bananas in. Divide between the two small loaf tins and bake in the middle of the oven for at least 30 minutes. Should not need more than 40 minutes. Skewer should come out of the middle clean. Leave on cooling rack until cool and then remove from tins. Freezes well.
