We're having 12x adults over for dinner and would be really grateful if anyone could share any Spanish-themed recipes.

The plan so far is to make a big seafood paella. I usually make chorizo with red wine but could do with a few more ideas.

We have room for everyone to sit round the table so I guess more 'family style' than stand up buffet. No vegetarians, dietary requirements or fussy eaters (phew!).

I like cooking and happy to spend some time in the kitchen but the more I can make in advance the better.

If you want more little bite type things, croquetas are pretty easy and absolutely delicious - they do ideally have to be fried shortly before eating though. Also a thin spread of sobrasada on toast drizzled with honey cut into small squares.

A big tortilla would be easy to make in advance. Padron peppers fry up in minutes so easy to add that in. I like fish stew - various recipes around, can look some out if you like the idea?

I don't suppose you have a good recipe for gambas pil pil? I have never made it taste like it does abroad, maybe not enough oil?

Me too! This is one we make a lot - I sometimes add chorizo to it. It’s really lovely. Not sure exactly how authentic it is (bbc good food easy recipe rather than from a Spanish source) but it seems to fit with things I’ve eaten there. Highly recommended.

My favourite Mallorcan snack is Pa Amb Oli, which is similar to bruschetta and makes a great starter. The Catalan equivalent on the mainland is Pa Am Tomiquet.

In it's simplest form it's just lightly toasted rustic bread, rubbed with garlic and tomato then drizzled with olive oil. I do it more like a cold pizza though. Skin and chop tomatoes, crush a couple of cloves of garlic and blitz in a blender. Spread onto your lightly toasted bread, then top with either manchego cheese or serrano ham. Drizzle with a good olive oil and sprinkle with fresh chopped parsley.

For a fish recipe my favourite is simple baked cod in tomato sauce. Add garlic and herbs to taste to passata, place cod fillets in a buttered dish, cover the fish with the tomato sauce, top each piece of fish with a slice of fresh mozzarella and bake until the cheese bubbles.

I did a Spanish style meal a while ago and the thing I realised is that I hadn't thought about how much of the menu needed to be cooked just before we ate - basically all the fried things. So my advice is keep that in mind when considering what you will include.

when I do prawns Spanish style, I heat a generous amount of olive oil, add sliced garlic and chilli then cook the prawns super quickly in the oil - takes only about 1-2 minutes. Then I turn the heat off and add a large handful of chopped parsley and a generous squeeze of lemon and pour into a serving bowl with a fair bit of the leftover oil/lemon juice. Goes down really well - I usually do this at BBQs in the summer as part of the snacks etc before we actually eat and even though I have to do it with everyone there, it takes less than 5minutes if I've sliced the garlic/chilli/parsley in advance.

Keith Floyd's recipe for rabbit with red peppers (from Floyd on Spain) is a favourite here, and it is equally good made with chicken thighs. I serve it with rice.

You can but tortilla with various flavourings in most supermarkets- IF you don't have the time, inclination to cook them from scratch. I always end up with the egg burnt and the inside raw!

When I do Spanish prawns, I heat the oil, add garlic and sprinkle in paprika. Then add the raw prawns till just cooked. On the serving dish with parsley and lemon 1/4's.

I know you’ve already mentioned chorizo, but if you haven’t tried this recipe before I’d highly recommend it. So tasty with warm, crusty bread.

I think that's probably a result of too hot stove. A heavy bottomed pan, and a low heat is important for tortilla.

Just come back to this one after a crazy couple of days at work.

Thanks for taking the time to add recipes and links. I have loads to go at now and have added fish stew, tortilla, prawns and tomato bread to my original list. We'll be eating Spanish leftovers for several days!
