Hot pot recipes please?

I've never made hotpot before but going to give it a go. Does anyone have a tried and tested recipe they could share? Also my potatoes are quite large, I will slice them using the side of a box grater will they be OK? As most recipes I've seen seem to have small/new potatos. Sorry if that sounds like a stupid question 😅

I haven’t made hot pot for years, but always made it with slices when I did. I just chucked it all in tbh but bbc good food has some recipes with reviews you could check out, the Lancashire hot pot near the top of the list has 5 stars and lots of reviews.

This is super easy. I've made it with capsicum like the recipe but carrots, celery, swede work too.
