French Tarte aux Pommes, anyone has tested recipe?

Last July, we went to France and we had the best apple pie ever. It had some sort of custard but not custard IYSWIM. I have looked at a few recipes online and tried two. One was too liquid, the other had not enough apples.

Can anyone point me in the right direction?

Thank you @Christmastree455555 for your suggestion. It wasn't a Tatin, more something like this https://cuisine.journaldesfemmes.fr/recette/306303-tarte-aux-pommes-normande . Ours however didn't have almonds.
Does the picture ring any bells in anyone?

You want a recipe with crème patissiere- that is what the cold custard stuff would be. Not ever made one so can't help with a recipe, but eaten lots!
